Fruity Ice Lollies with Black Currents:
Enjoy an explosion of taste with these mouth tingling purple lollies. They are made with fresh black currents that are full of vitamin C.
Ingredients:
(1) 200 grams Black currents.
(2) 100 grams caster sugar
(3) Grated zest and juice of 1 unwaxed lemon.
Cooking Time: Preparation time 10 minutes plus freezing.
Total Time: 15 minutes plus freezing.
Method:
(1) Place the black currents, sugar, lemon zest and juice in a pan with 75ml water. Heat gently, stirring until the sugar dissolves, then bring to the boil, simmer gently for 5 minutes then allow cooling.
(2) Puree the mixture with a hand held electric blender until smooth (or tip into a blender to liquidize) stir in 300ml chilled water. Tip the mixture into a jug then pour into lolly moulds and freeze for at least 4 hours, until solid.
Cook’s Tips: Any left over black currents can be combined with yogurt in a blender for a smoothie.
